Carrot cake energy bites! A perfect portable snack.
10 dates, pitted and soaked if hard
1 cup unsweetened shredded coconut (plus more for rolling, if desired)
1 cup walnuts
2 large carrots, peeled and roughly chopped
1/2 cup chia seeds
1/2 cup peanut or almond butter (plus more if needed)
1 tsp cinnamon
1 tsp vanilla
Pinch of salt
Put everything into a food processor and pulse until well mixed. If mixture seems dry and won’t hold in ball form, add a bit more nut butter.
Roll into balls! Can leave as is, or roll in coconut. I put some coconut in a ziploc bag and shook them around for easy coating.
