Have your cake and eat it, too! Carrot cake oatmeal, that is 🙋🏼🥕🍰

1 cup carrot, finely grated (about 1 large carrot)
1 cup milk of choice
1 tsp cinnamon
1/4 tsp ginger
Pinch of nutmeg
Pinch of salt
1 tbsp maple syrup
1/2 cup old-fashioned rolled oats
1 tsp vanilla
1 tbsp ground flaxseed
Optional garnishes: toasted coconut, walnuts, plain Greek yogurt, raisins
Put everything (except vanilla and flaxseed) into a pot over medium heat and stir to combine. Bring to a boil then reduce heat to low until cooked, stirring occasionally. Remove from heat and stir in vanilla and flaxseed.
Place into bowls and garnish as desired!
