Moroccan Carrot Hummus

You’ll want to eat allllllll the veggies with this Moroccan carrot hummus! πŸ’ƒ Full of flavour, protein and fibre! All the good things 😍

Ingredients:

  • 3 medium carrots, peeled and roughly chopped
  • 1-19 oz can chickpeas, drained and rinsed
  • 3 tbsp tahini
  • 2 garlic cloves
  • 2 tbsp red wine vinegar
  • 3 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground cardamom
  • 1/4 tsp cinnamon
  • 1/4 tsp smoked paprika
  • Lots of black pepper, pinch of salt
  • 1/4 cup olive oil
  • To garnish (optional): olive oil, a few tbsp chopped pistachios, sprinkle of red chilli flakes

Directions:Β 
Put carrots into a food processor and mix until broken down into fine pieces. Add remaining ingredients (except olive oil) and purΓ©e. Slowly drizzle in the 1/4 cup of olive oil and blend until smooth.
Note: this recipe would also work in a high powered blender.
Garnish with an extra drizzle of olive oil, chopped pistachios, and a sprinkle of red chilli flakes! Omg! πŸ’ƒ
