Veggie Lover’s Bowl

The veggie lovers bowl! This ☝🏼 sums up a perfect meal for me. Loads of veggies (including my fave, beets! Oh and my other fave, asparagus!), red quinoa and chickpeas, topped off with a delicious creamy parsley-dill sauce. And of course, avocado! Who am I kidding, I love alllllll the veggies. 💕

Ingredients:
1/2 cup mayo
1/3 cup coconut milk
4 green onions
1/2 cup packed parsley
1/4 cup packed dill
1/3 cup packed basil
1 tsp honey
Salt and pepper, to taste

Directions:
Pop everything into a food processor or blender and mix until smooth.
