Radish, Fennel & Citrus Salad


“This is the most delicious salad I’ve ever eaten in my life!” – my exact words while gobbling this up. It is incredibly fresh tasting, and the flavours and textures pair so well together.

I’ve had the very exciting opportunity to partner with Babe Farms, a specialty produce farm in Santa Maria, California. Their produce is not only beautiful, but incredibly flavourful as well. I’ve been having so much fun preparing recipes featuring their gorgeous veggies. This salad features a variety of radishes, baby fennel and heirloom carrots from Babe Farms!

This is more of a salad concept than a recipe- but I can assure you that the flavour pairings are absolutely delicious! If you have a little more or less of one ingredient or another, it will not make a huge difference. Prepare it as your heart desires!

Ingredients:
2 cups radishes, a variety of kinds if possible, sliced thinly
2 medium carrots, peeled into ribbons
1 small fennel bulb, sliced thinly
1 grapefruit, peeled and sliced into rounds, then halved (*slice grapefruit over a bowl to catch the juice as some will be used in the dressing)
1 avocado, cubed
1 small handful mint leaves, roughly chopped
1-2 tbsp chives or green onion, thinly sliced
Drizzle of olive oil

Directions:
1) Add all of the veggies and fruit to a large bowl. Drizzle with olive oil and a tablespoon or so of grapefruit juice- add a little more if you’d like to! Toss to combine.

Serving suggestion: Try pairing this salad with some grilled salmon for protein, or stir in a can of rinsed and drained cannellini beans for a vegan option!
