Watermelon Salad

This salad is the epitome of summer! The crunchy, juicy veggies and fresh flavour from the lime and mint make this salad irresistibly light and refreshing- a perfect side dish to enjoy on the deck! Additionally, the sweet and savoury ingredient pairings will have you coming back for more!


I added seared scallops to my salad for some needed protein, but feel free to pair it with BBQ chicken , fish or tofu! Stir in a can of drained and rinsed white kidney beans for an alternative vegetarian protein option.

This salad has it all- carbohydrate from the watermelon, healthy fats from the avocado, protein from whatever you choose to pair it with, and loads of fibre from all those veggies. A balanced and nutritious meal that is anything but boring!

Ingredients:
2 cups seedless watermelon, cubed
2 cups watermelon radish, thinly sliced (slice into half-moons if large)
1 cup cucumber, thinly sliced
1/2 cup red onion, thin sliced
1 avocado, thinly sliced
1/2 cup fresh mint, roughly chopped (or chiffonade- stack mint leaves on top of one another, roll like a cigar and thinly slice- you’ll get thin ribbons!)
1/4 cup feta, crumbled
Juice of 1/2 lime
Salt & pepper, to taste

Directions:
1) Place all ingredients into a large bowl and toss to combine. Adjust seasoning to taste- adding a little more lime juice, salt or pepper until it is just right!
