When hubs gets called into a meeting last minute and you’re left to fend for yourself for dins 🙃! Threw these together based on what we had in the fridge (and garden!). Pico de gallo sweet potatoes with black beans, avocado and hemp cheese 🧀🍅🥑!!! Beans are a total staple in my kitchen. They are one of the quickest and easiest protein options… meaning dinner comes together in no time, even on a busy weeknight! Yes please! 💃

Hemp cheese:
Ingredients:
1/2 cup hemp hearts
3 tbsp nutritional yeast
3 cloves garlic
1 tsp chilli powder
1 tsp onion powder
1/2 tsp ground cumin
Salt and pepper, to taste
1/2- 3/4 cup water
Directions:
Put everything (except water) into a blender. Add about 1/2 cup water and blend until smooth. Add additional water until desired consistency is reached.
