Mango-Black Bean Burrito Bowls

Who likes mango salsa? Or should I say who doesn’t like mango salsa? Sweet, spicy, savoury and zingy- it’s classified as addictive in my books!

Mango salsa is one of those things that tastes great on just about anything. Try spooning some overtop of cooked chicken or fish, scoop it up with tortilla chips, or heap some atop a baked sweet potato. I decided to incorporate mango salsa into these black bean burrito bowls and it really packed a flavourful punch!

Mango salsa has all of those recognizable Mexican flavours- chili powder, cumin, cilantro, jalapeno and lime juice. You could also substitute various fruits and play on the flavour- like fresh peaches or nectarines, pineapple, or even melon!

I love these burrito bowls. I am a notorious “over-stuffer” when it comes to all kinds of wraps (burritos, tacos, fresh rolls… *face palm*), and this is a great way to load up on all your favourites without fear that it’ll fall apart!

Skip the white rice and opt for brown for major “fullness factor” (thanks to the fibre content and lower glycemic index). Try topping it with some plain Greek yogurt for a nutritious alternative to sour cream (also a super versatile ingredient to have on hand for both sweet and savoury uses). And, as always, feel free to load it up with all the veggies!

Ingredients:
1 cup brown rice, cooked according to package directions
Sliced veggies: radishes, bell peppers, avocado
Plain Greek yogurt, for serving
Hot sauce or sriracha, for serving

For the mango black bean salsa:
1- 19oz can black beans, drained and rinsed
1 mango, diced
1 1/2 cups tomato, chopped
1/2 cup red onion, diced
1 jalapeno, minced (seeds removed)
1/3 cup cilantro, chopped
1 tsp garlic powder
1/2 tsp chili powder
1/2 tsp ground cumin
1/2 lime, juiced

Directions:
1) Cook rice according to package directions.

2) While rice is cooking, prepare the salsa. Place all salsa ingredients into a medium bowl and toss to combine.

3) Prepare additional chopped veggies for the bowl: e.g. radishes, peppers, avocado.

4) Serve it up! Place a few scoops of brown rice into a bowl, top with freshly sliced veggies, mango-black bean salsa, a dollop of Greek yogurt and hot sauce, if desired!
