🦄Purple cauliflower tabbouleh💜 Super bright and fresh-tasting…perfect for summer! ☀️🌷🌱🍋
Ingredients:
1 small head cauliflower (I used a purple one!), cut into smaller pieces and processed into “rice”
2 large tomatoes, chopped
1 cucumber, seeded and chopped
1 green pepper, chopped
1 small bunch parsley (or 1/2 large bunch), chopped
1 handful fresh mint, chopped
1 bunch green onions (about 8), sliced
Dressing:
1/2 cup olive oil
1/4 cup lemon juice
2 garlic cloves, grated
Small squeeze honey (about 1/4- 1/2 tsp)
Plenty of black pepper
Pinch of salt
Directions:
In a food processor, pulse cauliflower in batches so that it processes into “rice” evenly. Put in a large bowl. Add in remaining veggies and herbs and stir to combine. Mix dressing in a mason jar or bowl and pour over top of salad. Mix well.
