Sunshine rolls on this beautiful ☀️☀️☀️ day! Had some leftover salad ingredients and decided to make myself a snack!
Ingredients
Rice paper wraps
Grated carrots
Grated beets
Cucumber
Yellow pepper
Basil leaves
Edamame
Directions
Soak rice paper wraps (one at a time) in cold water for 20 seconds. Place prepared veggies in bottom 1/4 of wrap; roll it up like a burrito! Repeat!
I used some leftover avocado pesto for the dip– made from some odds and ends I wanted to use up in the fridge (as usual)!
Put into a food processor: 1.5 avocados, handful of cilantro and basil, 2 garlic cloves, 1/2 small yellow onion, 1 jalapeño, 2 handfuls almonds (about 1/2 cup), 2 tbsp lemon juice. Buzz it up!
