I’ve recently been experimenting with preparing homemade nut milks. I absolutely LOVE the flavour and texture, and the fact that there are no weird ingredients added. The one thing that is important to be aware of, however, is that homemade nut milks are not a good source of calcium like their calcium-fortified counterparts (i.e. store-bought varieties). It is important to be sure to get enough calcium from other dietary sources!
Homemade nut milks are super easy to prepare- especially coconut, because there is no soaking required (as there is with others, like almond milk). I prepared my homemade coconut milk as follows:
Homemade Coconut Milk
Ingredients:
2 cups unsweetened shredded coconut
4 cups water
Pinch of salt
Directions:
Add coconut milk, water and a pinch of salt to a high-powered blender. Blend on high for 3-4 minutes, then strain through a nut milk bag. You can save the coconut pulp for use in other recipes!
Use your homemade coconut milk in lattes, smoothies, oatmeal or cereal! Or just drink it plain! It is that good.
Chocolate-Strawberry-Coconut Smoothie
Ingredients:
1 cup frozen strawberries
1/2 cup frozen avocado
1/2 cup plain kefir
3/4 cup homemade coconut milk (as above)
1 tbsp. ground flaxseed
1 tbsp. unsweetened cocoa powder
Directions:
Add all ingredients to a blender and blend until smooth.
