These turmeric-tahini-coconut bliss balls make for the perfect snack. I whipped them up for Father’s Day as my dad loves energy balls and is always requesting I make him some. I was sure to feature some of his favourite flavours in these ones, sweetening them with blackstrap molasses (only 1 tbsp. for the whole batch) for a bit of an iron boost as he’s been a vegetarian since 1979! It’s no surprise I enjoy plant-based eating since I’ve grown up with these foods so often on the dinner table.
These bliss balls feature whole food ingredients with very minimal sugar. I used 1 tbsp. of molasses in the whole batch and I think they’re perfectly, subtly sweet. The healthy fats, fibre and protein in these balls contribute to satiety and stable blood sugars- throw a few in your lunch bag instead of that granola bar for a healthy afternoon snack!
Ingredients:
1 cup unsweetened shredded coconut
1/2 cup tahini
1/4 cup oats
1/4 cup chopped almonds
1 tbsp. blackstrap molasses
1 tsp turmeric
1 tsp cinnamon
1/2 tsp ground ginger
To decorate (optional):
Additional unsweetened shredded coconut (a few tablespoons)
Sesame seeds (a few tablespoons)
Directions:
1) Add the shredded coconut to a food processor and pulse until it is finely broken down.
2) Add the remaining ingredients and process until it comes together (*Note: I chopped the almonds by hand so I could control their size and ensure they were evenly chopped). Taste the mixture and add more molasses if needed.
3) Roll mixture into balls. Roll in additional toppings if desired: shredded coconut, sesame seeds.
