A feast for the eyes and for the taste buds- this roasted veggie side dish is too good to skip! The creamy garlic & lemon hemp dressing really takes these veggies to a new level. Just try it out and see for yourself!
The dressing is delicious in this recipe, but also makes a great base for a raw veggie dip. Feel free to customize the flavourings according to your favourites. You could do a version of this dip with added smoked paprika, cumin and cayenne, or add some dill for a ranch-style dressing. So delicious and versatile!
Ingredients:
1 head cauliflower (I used purple cauliflower), cut into florets
1 head broccoli, cut into florets
Avocado oil
Salt & pepper, to taste
1/4 cup chopped almonds
For the sauce:
3/4 cup hemp hearts
1/4 cup water
4 tbsp. lemon juice
3 cloves garlic
1 tbsp. nutritional yeast
Salt and pepper, to taste
Directions:
1) Preheat oven to 425F. Place broccoli and cauliflower florets onto a baking sheet, drizzle with avocado oil and season with salt and pepper. Toss until evenly coated. Roast for about 30-35 minutes, until cooked through and beginning to brown/ crisp at edges.
2) Meanwhile, prepare the sauce. Place all sauce ingredients into a blender and blend until smooth. Adjust seasoning to taste, or add more water for a thinner consistency if desired.
3) Place broccoli and cauliflower onto a tray. Drizzle with sauce and sprinkle with chopped almonds.
